Chicken Saagwala

Ingredients
Chicken pieces (skinned and boneless) 1 kg
Vegetable oil 2 tbsp
Bay leaves 4
Cardamom 6
Cinnamon stick 4 inch
Cloves 6
Whole red chilies (dry) 4
Curd (well beaten) ½ cup
Black pepper powder ¼ tsp
Ginger paste 1 tsp
Garlic paste 1 tsp
Onions (finely chopped) 3 medium
Green chilies 4
Coriander leaves 1 bunch
Spinach (chopped and washed) 2 bunches
Whipped Cream 2 tbsp
Salt To Taste

Method
Put oil in a heavy bottom pan. When the oil is ready put in bay leaves
cardamom, cinnamon, cloves, red chilies.
When they start spluttering add the onion and sauté until they become
translucent.
Now add the ginger garlic paste and continue to stir until the masala is well
fried.
Add chicken pieces and brown. Fry well until they are well coated with the
masala.
Now stir in the yogurt, salt and pepper. Allow it to simmer over low flame.
Blanch the spinach lightly and when it cools blend it along with the coriander
leaves and green chilies into a coarse paste.
Add the green paste to the chicken and cook until the chicken is well done.
Before serving top it with whipped cream.
