Beef and Cheese Enchiladas

1-2 pounds ground beef (depending on your family size)
1 can tomato sauce
1/2 to 3/4 pound cheddar cheese (mild, medium, sharp, whatever you like)
1 can pitted olives
1 pack burrito-sized flour tortillas (usually 12)
1 medium onion
1 package ready-made enchilada sauce mix

Bring tomato sauce, 1/2 can water and enchilada mix to a boil, stirring occasionally; set aside.

Slice olives and grate cheese; set aside.

Brown ground beef with chopped onion; drain grease.
Mix half of the tomato sauce and enchilada mix with the meat; set aside.

Grease a large (9x13) glass pan and spread a couple of spoonfuls of the
tomato sauce and enchilada mix into the bottom of the pan.

In each tortilla, put a couple of spoonfuls of meat, a handful of cheese
and a couple of olives, then roll tortilla and place in pan until pan is full.

Spread remaining tomato sauce on top of enchiladas.
Spread cheese over the top and top with remaining olives.

Bake in preheated 350 degree oven for 15 to 25 minutes, or until cheese is melted
and tortilla ends are browned. Let cool for about 10 minutes.
