Crunchy Sweet Potato Casserole Recipe

1 large can (1 lb. 13oz.) sweet potatoes, drained and mashed

1 cup sugar 2 eggs, beaten 1/2 cup milk

1 tsp. nutmeg 3/4 stick butter, melted Topping:

1/2 cup nuts

1/2 cup brown sugar

3/4 cup cornflakes, broken

3/4 stick butter, melted

Mix all ingredients, except topping ingredients, and bake for 25 minutes at 350 deg. in an 8 1/2 X 8 1/2 glass dish. Mix topping ingredients and spread on top. Bake an additional 25 minutes at 350 deg.

4 Small Sweet Potatoes

Salt To Taste 1 Tsp.

Ground Cinnamon 2 Tsp.

Grated Orange Rind 2 Tbsp.

Melted Butter Or Margarine

1/2 Cup, Plus 4 Tbsp. Apple Butter

Cook sweet potatoes in boiling water for 20 to 25 minutes or until tender. Let cool to touch: peel and cut into 1/2 inch slices. Arrange slices in lightly greased 8 inch square pan; sprinkle lightly with salt. Combine remaining ingredients and mix well. Spread mixture over sweet potatoes. Broil 6 inches from heat until bubbly. Makes 4 servings.

Sweet Potato Shuffle Recipe

3 cups sweet potatoes, cooked & mashed

1 cup sugar 2 eggs 1/2 stick margarine, melted

1 tsp. vanilla

1/2 cup milk

Topping: 1 cup pecans

1 cup brown sugar

1/2 stick margarine, melted

1/3 cup flour

Mix potatoes, sugar, eggs, margarine, vanilla and milk. Place in a greased casserole dish (2 qts.). Mix topping ingredients and spread over potato mixture. Pat lightly. Bake 35 minutes at 350 deg.
