Strawberries and Lemon Cream in Fillo Shells
To make lemon cream, in large bowl, mix sour cream, confectioners sugar, lemon peel, and juice. Cover and refrigerate.
- 2 1/2 cups sour cream
- 1/3 cup confectioners sugar
- 2 Tbsp. grated lemon peel
- 2 Tbsp. lemon juice
- 2 pt. strawberries
- 4 sheets fillo dough
- 2 Tbsp. softened butter
- 12 mint leaves for garnish
- 12 lemon wedges for garnish
Wash and hull strawberries, cut into quarters, and toss with sugar. Chill.
Prepare 12 shells, 4" diameter, according to package directions. Using muffin pans. Bake in greased pan in preheated 325 degree oven for 8-10 minutes or until golden brown. Cool.
Spoon 2 Tbsp. lemon cream into each shell, arrange strawberries on top and finish with more lemon cream. Garnish with mint leaves and a lemon wedge.
