Finnish Oven Pancakes

Ingredients Cider Sauce:
  • 1 cup sugar
  • 2 Tablespoons cornstarch
  • 1/2 teaspoon pumpkin pie spice
  • 2 cups cider/apple juice
  • 2 teaspoons lemon juice
  • 1/4 cup butter Preheat oven to 425 degrees. Melt one Tablespoon butter in each of the two 8-inch saute pans. Put eggs, cottage cheese, and milk in blender. Blend until smooth. Add dry ingredients together and then add to the milk-egg mixture. Pour equal amounts into saute pans and bake approximately twenty minutes until well-browned. They will be puffy and "jiggly" -- not set. Let cool five to ten minutes. It will sink, leaving high sides. Cut into wedges.

    Cider Sauce: Combine all ingredients except for butter in a sauce pan and cook over medium heat until thick. Boil one minute. Take off heat and add butter.
