Freezer Scalloped Potatoes with Mozzarella
Melt butter in saucepan and add flour, blending well. Add milk and stir constantly until thickened. Remove from heat and stir in cheese until melted. Set aside to cool while boiling potatoes. Boil potatoes until almost done and still firm. Drain and run under cold water in a colander. Divide potatoes into freezer bags and pour even amounts of cheese sauce over.
- 5 lbs potatoes, washed and sliced with skin on
- 1 lb mozzarella cheese, shredded
- 1/2 cup butter
- 1/2 cup flour
- 4 cups milk
- salt and pepper to taste
To serve: Thaw and pour into baking dish. Bake at 350* for 20 mins or until heated through.
