Desiree's "Granny's Macaroni & Cheese"
Boil macaroni in 3 qts salted water. Boil 3-5 min. (do not drain the noodles the water is part of the recipe) then add margarine. Stir until melted. Put lid on pan and let stand on burner until macaroni is nearly tender (heat should be on low). Add evaporated milk with it still on simmer. Let get hot but not boil. Stir in cheese and eggs..stir constantly so eggs don't set --watch to keep from boiling.
- 24 oz elbow macaroni
- 3 sticks margarine
- 2 cans evaporated milk
- 1 lb grated long horn cheese
- 6 beaten eggs
Pour into 9 X 13 baking pan sprayed with nonstick cooking spray. Bake 350 F for 20 min. You can add pepper or paprika on top to taste. The last 5 minutes add a small layer of graded cheese...you can keep out about 1/2 cup from the 1 lb of grated to put on top.
This is my Granny's recipe and our whole family loves it and eats it at every special occasion.
P.S. I just asked my mom about this and she says she thinks this makes 2 pans 9 X 13.
