Pumpkin Roll

Beat 3 eggs for five minutes
Slowly add 1 Cup sugar
Stir in 2/3 Cup pumpkin
1 tsp. lemon juice

Mix together: Fold all above into pumpkin mixture. Spread into greased and floured jelly roll pan. Top with chopped walnuts and bake for 15 minutes at 375.

Turn out on a towel that has been sprinkled with powdered sugar. Starting at the narrow end, roll towel and cake together. Set aside to cool.

When cool-unroll and spread filling. Reroll. Chill.

Filling: Beat well until smooth.
