Heat oven to 350. Coat mini muffin pans with cooking spray. Divide the dough into 1/2 inch slices and then divide each of these slices in half. Roll into a ball. Place 1 ball in each muffin cup. Bake for 8-10 min. until cookies puff up. Press unwrapped mini peanut butter cup into center of each. Return cookies to oven for 1 to 2 min. until lightly browned. Remove from oven and let cool in pan for 10 min. Then finish cooling on wire rack.
- 1 18 oz pkg. of refrigerated sugar cookie dough
- 1 14 oz. pkg. of mini peanut butter cups
This recipe came from the December/January 1997 Child magazine. My preschooler loves to help make these.
