Old Fashioned Home-Made Ice-Cream

This one looks and tastes like soft serve:
3 cups light cream, 1 1/2 cups sugar, 1 tbsp vanilla, 3 cups whipping cream. In a large bowl, combine the light cream, sugar and vanilla. Stir until sugar dissolves. Stir in the whipping cream. Freeze in a 4- or 5-quart ice-cream freezer.

This one comes out a little harder:
2 cups sugar, 2 envelopes unflavored gelatin, 6 cups light cream, 6 beaten eggs, 2 cups whipping cream, 3 tbsp vanilla. In a large saucepan, combine the sugar and gelatin. Stir in the light cream. Cook and stir over med til mixture almost boils and sugar dissolves. Stir about 1 cup of hot mixture into beaten eggs; return all to saucepan. Cook and stir for two more minutes---do not boil. Stir in whipping cream and vanilla. Cool. Freeze in ice cream freezer (4 or 5 quart)
