Apple Pizza

Preheat the oven to 350F. On a lightly floured surface, roll out the pizza dough to form a rectangle. Place it on a 10" x 15" rimmed baking sheet that has been coated with nonstick cooking spray. With your fingertips, gently spread the dough to cover the pan, pressing it up the edges to form a rim. If the dough is too sticky, lightly dust it and your hands with flour. Spread the melted apple jelly evenly over the dough, then arrange the apple slices in a single layer. In a small bowl, combine the sugar and cinnamon; sprinkle over the apples. Bake for 18 to 20 minutes, or until the edges are golden. Remove from the oven and cool slightly in the pan on a wire rack. Slice and serve warm or allow to cool before serving.

NOTE: For a sweeter touch, top with a glaze made of 1 cup confectioners' sugar and 2 tablespoons water. Whisk until smooth then drizzle over the pizza while still warm. Any seasonal fruits like peaches or pears and your favorite jelly can also be used.
