Peach & Jalapeno Quesadillas

This sounds weird but it is wonderful!

Slice or chop peaches
sprinkle on flour tortilla
top with mild jalapeno slices
top with monterrey jack cheese or mild white cheese
You can add chopped red onion to taste (make sure to chop then rinse your onions well, that helps the flavor and your breath!)

Grill on heavy skillet lightly buttered OR place in microwave until cheese is melted. (They are better in skillet)

Try it and enjoy!
