If you have freshly picked peppers, remove the stems, carefully slit the peppers open and remove the seeds. You may want to wear gloves to do this, because the capsaicin in the peppers can burn your hands (and anything else you touch, like your eyes). If they're from a jar, just slice them open. Carefully stuff each pepper with approximately 1/2 teaspoon of feta cheese, but this depends on how big the peppers are. Anyway, stuff them until they're plump. Put the peppers in an oven proof dish and pour the chutney over them. Run them under the broiler briefly until they start to brown a bit.
- jalapeno peppers (preferably fresh)You'll want at least three or four for each person
- feta cheese (amount depends on # of peppers - one regular size package is plenty)
- chutney in a jar (Crosse & Blackwell's Major Grey's is good)
