Hard-To-Find Sweet Potato Casserole
 
 
1. First Layer - Mix together and line bottom of 9x13 inch glass casserole dish, pressing firmly with spoon:
- 2 cup graham cracker crumbs
 - 1/2 cup sugar
 - 1 stick butter or margarine, melted
 
2. Second Layer - Mix together well and pour over crust:
- 2 8-oz. pkgs. cream cheese, softened
 - 1 tsp. lemon juice
 - 1 tsp. vanilla
 - 1 cup sugar
 - 2 eggs, beaten
 
3. Third Layer - Mix together well and pour over cream cheese mixture:
- 2 large cans yams, mashed well (I use mixer)
 - 1 cup brown sugar
 - 2 eggs, beaten
 - 1 stick butter or margarine, melted
 
4. Fourth Layer - Mix together well and sprinkle on top of yams:
- 1 stick butter or margarine, melted
 - 1 cup brown sugar
 - 1/2 cup flour
 - 1/2 cup pecans, chopped
 
5. Bake at 325 degrees (F) for 40 minutes.
Note: This dish is best served hot.
