Cook potatoes only until tender.
- 6 cups cubed potatoes
- 2 tsp. (or less) salt, divided
- 2 cups small curd cottage cheese
- 1 cup sour cream
- 1/4 cup instant onions or minced onion
- dash of garlic powder
- 1/2 cup shredded cheddar cheese
Cool, cube and then measure.
Sprinkle with 1 tsp. salt.
Combine cottage cheese, sour cream and the remaining 1 tsp. salt, minced
or instant onions and garlic powder.
Mix thoroughly, then fold in cubed potatoes gently.
Place in a buttered casserole (1 1/2 quart).
Top with shredded cheese and sprinkle with paprika.
Bake for 45 minutes in a 350 degree oven.
***these are the potatoes that my Grandmother used to make, I don't use the amount of salt that she did....though she did live till 93 years of age!
