Broccoli Cheddar Pie
Preheat oven to 400 degrees.
- 1 cup grated Cheddar cheese
- 3/4 cup flour
- 1/2 tsp. salt
- 1/4 tsp. dry mustard
- 1/4 cup melted butter
Combine cheese with flour, seasonings and melted butter.
Press on bottom and sides of 10 inch pie pan.
Saute onions and mushrooms in the butter in a skillet over medium high heat
- 1 medium onion chopped
- 1/4 pound fresh mushrooms, sliced
- 2 Tbs. butter
- 2 Tbs. flour
- 1 cup light cream
- 1 tsp. salt
- 1/4 tsp. nutmeg
- 2 cups fresh broccoli, chopped and cooked until tender
- 3 eggs slightly beaten
- dash of pepper
until the mushrooms have given off their liquid and onions are soft.
Stir in flour and cook until off-white.
Cook until well mixed and smooth.
Add cream, salt, nutmeg and pepper and simmer for 1 minute.
Remove from heat and add the cooked broccoli and beaten eggs, stirring well to blend.
Pour into the unbaked cheese crust.
Bake at 400 degrees for 15 minutes.
Reduce heat to 375 and bake for another 20 to 25 minutes.
