Broccoli Rice Casserole
1/2 cup chopped onion
2 tbls. butter or margarine divided
2 cups hot cooked minute premium long grain rice
1 can cream of mushroom soup
1 package frozen chopped broccoli, cooked, well drained
1 jar cheese whiz
1/2 cup fresh bread cubes
Cook and stir onion in 1 tablespoon of the butter in large skillet on
medium heat until tender.
Add rice, soup, broccoli and process cheese sauce; mix lightly.
Spoon into 1 1/2 quart casserole.
Melt remaining 1 tbls. butter
and toss with bread cubes; sprinkle over casserole.
Bake at 350 degrees for 30 to 35 minutes or until thoroughly heated.
Garnish with croutons, green onion and red bell pepper
