MM: Jolly Santa Lollipops
---------- Recipe via Meal-Master (tm) v8.04

Title: Jolly Santa Lollipops
Categories: Christmas, Candies
Yield: 12 Servings

12 Lollipop sticks
1 c Sugar
1/2 c Light corn syrup
1/4 c Water
1 To 2 tsp. cherry extract*
1/8 To 1/4 tsp. red food colour
2 Large marshmallows
4 Gumdrops

Line 2 cookie sheets with foil, keeping foil very
smooth. Place lollipop sticks 4 inches apart on
cookie sheets. In medium saucepan, combine sugar,
corn syrup and water. Cook, stirring constantly until
sugar dissolves. Cook without stirring until candy
thermometer reaches 290øF. (soft - crack stage.)
Remove from heat. Immediately sitr in cherry extract
and red food colouring. Using about 1 tablespoon of
syrup for each lollipop, quickly spoon syrup over
sticks, shaping into round head with peaked cap.**
Let cool and harden.

Remove from foil. With scissors, cut marshmallows
into strips and gum drops into pieces or slices.
Place cut sides down on lollipops to create Santa
faces. 12 lollipops.

Tips:* One teaspoon peppermint extract or 4 to 5
teaspoons raspberry extract can be substituted for
cherry extract. ** If syrup becomes to stiff, return
to low heat until thin enough to spoon. Source:
