ITALIAN COOKIES

6 c. sifted flour
6 tsp. baking powder
1 c. oil
6 eggs
1 c. sugar
dash of salt
1 tsp. vanilla or lemon
extract

Beat oil, eggs and sugar. Add extract. Mix in sifted
dry ingredients. Roll into 1-inch balls. Bake at 350 degrees for 8
to 10 minutes only until very light brown on bottom. When
cooled, frost with glaze made with confectioners sugar and a
small amount of milk. If you like something that's not too
sweet, these are great.

VANILLA ITALIAN COOKIES

4 eggs
1 c. sugar
1 c. oleo, melted
1 c. milk
1 tsp. vanilla
1 tsp. lemon
5 c. flour
5 tsp. baking powder

Frosting:
1/2 c. oleo, melted
1/2 c. shortening, melted
1 tsp. salt
2 tsp. vanilla
1 1/2 lb. confectioners sugar
milk, scalded

Beat eggs and sugar and melted oleo until light and
fluffy. Add flour with baking powder and milk alternately; mix
well after each addition. Then add lemon and vanilla. Drop by
teaspoon onto baking sheet and bake 12 minutes in a 350 degrees oven.
Mix ingredients for frosting together and add enough
scalded milk to make a smooth spreading consistency.

WHITE ITALIAN COOKIES

5 eggs
3/4 c. sugar
6 Tbsp. oil
6 Tbsp. shortening
4 c. flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. lemon juice

Beat eggs, sugar, oil and shortening until well blended.
Sift flour, baking powder and salt. Add to egg mixture. Add
lemon juice. Roll into small balls. Bake in a 350 degrees oven for
10 minutes. Frost with white icing. Butter icing with a
little lemon flavor is good.

SOFT ITALIAN COOKIES

4 eggs
1 c. sugar
1 c. butter or margarine,
melted and cooled
1 c. milk
1 tsp. vanilla extract
1 tsp. lemon extract
6 tsp. baking powder
4 to 5 c. sifted flour

Mix together eggs, sugar, shortening, milk, vanilla,
lemon extracts and baking powder. Add flour, an amount needed
to make a soft pliable dough. Knead dough lightly and shape
into rings or roll into balls the size of walnuts. Place on
lightly greased cookie sheets and bake at 350 degrees approximately 15
minutes or until done.
Frost with a butter frosting.

Butter Frosting:
6 Tbsp. butter or margarine
1 lb. pkg. confectioners
sugar, sifted
1/4 c. milk (approximately)
1 1/2 tsp. vanilla
Cream butter or margarine. Add about half the sugar,
blending well. Beat in 2 tablespoons milk and vanilla.
Gradually blend in remaining sugar. Add enough milk to make a
spreading consistency.
