There is not an official, single American chocolate muffin or cookie recipe. There are many varieties. I am posting two basic recipes which are my favorites followed by a recipe for a truly American cookie.

Chocolate Muffins

2 Tablespoons butter
1 cup granulated sugar
2 eggs; separated
1-1/2 cups all purpose flour
1/2 cup coffee
2 teaspoons cocoa
1-1/2 teaspons baking powder
1/2 teaspoon vanilla extract

Cream together the butter and sugar. Beat egg whites until stiff; beat egg yolks until creamy. Add to sugar the egg yolks, then beat well. Add flour, coffee, cocoa, baking powder and vanilla and mix til well blended. Fold in the egg whites. Put into greased muffin tins and bake about 20 minutes in a moderate oven. You may use more cocoa if you like.

Chocolate Crinkles

2 cups granulated sugar
1/2 cup vegetable oil
2 teaspoons vanilla wextract
4 squares (1 oz each) unsweetened chocolate melted and cooled
4 eggs
2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup powdered sugar

Mix sugar, oil, vanilla, and chocolate. Mix in eggs, one at a time. STir in flour, baking powder and salt. Cover and refrigerate at least 3 hours.
Heat oven to 350. Drop dough by teaspoonfuls into powdered sugar; roll around to coat. Shape into balls. Place about 2 inches apart on greased cookie sheet. Bake for 10 to 12 minutes, when almost no indentation remains when touched.

Original Nestle® Toll House® Chocolate Chip Cookies

2-1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter or margarine, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large egg
1 (12 ounce) package NESTLE ® TOLL HOUSE ® Semi-Sweet Chocolate Morsels
1 cup chopped nuts

1 PREHEAT oven to 375 degrees F.
2 COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
3 BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
Makes 5 dozen.
