MARYLAND FRIED CHICKEN

2 1/2 to 3 lb. cut up chicken
1/2 c. flour
1/2 tsp. salt
salad oil
2 eggs
1/2 tsp. paprika
1/4 tsp. pepper
2 Tbsp. water
2 c. cracker crumbs

Remove skin from chicken. Wash and dry. Mix flour,
salt, paprika and pepper. In another container mix 2 eggs and
2 tablespoons water. Heat 1/4 inch oil in skillet. Coat
chicken with flour mix. Dip into egg mix, then into cracker
crumbs. Cook in oil over medium heat 15 to 20 minutes. Reduce
heat, cover tightly and simmer 30 to 40 minutes. Turn chicken
1 or 2 times. Remove cover last 5 minutes, depending on size
of pieces. I precook chicken in microwave on High power for 5
minutes.

CHICKEN MARYLAND

4 boneless chicken breasts,
skinned
8 slices bacon
1 egg, well beaten
seasoned flour
1/2 c. oil for frying
honey

Dip chicken into egg, then flour. Repeat and fry until
golden brown and done. Drain on paper towel. Place on plat-
ter, crisscross 2 pieces crisp bacon on each and drizzle with
honey.
