Do-Ahead Ground Chicken Lasagna

Prepare this recipe the night before, pop it in the oven for a half hour when you get home, and dinner is ready.

1 pound ground chicken
1 can (16 ounces) tomatoes
1 can (6 ounces) tomato paste
1 1/2 tablespoons chopped parsley, divided
1/2 teaspoon salt, divided
1 teaspoon dried basil 1 carton (16 ounces) low-fat, small curd cottage cheese
1 egg, beaten
1/4 teaspoon pepper
1/3 pound lasagna noodles
1/3 pound skim milk mozzarella cheese, shredded
1/4 cup grated Parmesan cheese
Heat a frying pan. Add ground chicken and brown, stirring, for about 6 minutes. In a processor, combine tomatoes, tomato paste, 1/2 tablespoon parsley, 1/4 teaspoon salt, and basil; process about 1 minute. Stir tomato mixture into the chicken and simmer for about 20 minutes.
In a bowl, combine remaining parsley and salt, cottage cheese, egg, and pepper. In the bottom of a shallow baking dish, spread a small amount of the ground chicken mixture.

Layer half of noodles (uncooked), cottage cheese mixture, mozzarella cheese, Parmesan cheese, and ground chicken mixture. Repeat layers, but save Parmesan cheese for topping. Cover and let sit in refrigerator overnight.

Preheat oven to 375 degrees. Bake for 30 minutes. Let stand about 10 minutes and cut into squares.

Makes 6 servings.
