Sweet Potato Pie


1 pound of sweet potatoes
3/4 cup sugar
1 teaspoon nutmeg salt
1/4 teaspoon vanilla extract
2 drops lemon flavoring
2 eggs, lightly beaten
1 can evaporated milk
1/2 cup of regular milk
pie crust
whipped cream

Boil sweet potatoes until soft. In a large mixing bowl, combine sweet potatoes, sugar, cinnamon, nutmeg, a pinch of salt, 1/2 teaspoon vanilla extract, lemon flavoring, and eggs. Slowly add evaporated milk and regular milk and mix well. Pour into pastry-lined pie pan. Cover edge of pie crust with foil. Bake at 375 degrees for 25 minutes. Remove foil and bake for 25-30 minutes or more, until knife comes out clean. Serve with whipped cream.
