Orange Praline Yams Casserole

Makes 12 servings
2 40-ounce cans yams, drained or 4 pounds cooked, peeled and sliced fresh yams or sweet potatoes
2/3 cup orange juice
1 tablespoon grated orange peel (orange part only)
5 tablespoons brandy
2 teaspoons salt
Freshly ground pepper
1 teaspoon ground ginger
3/4 cup margarine or butter, melted (1 1/2 sticks, divided)
1 cup firmly packed light brown sugar (divided)
3 egg yolks
1 cup chopped pecans (about 4 ounces)
1 teaspoon ground cinnamon


In a mixing bowl with electric mixer, beat yams until smooth. Add orange juice and peel, brandy, salt, pepper to taste, ginger, 1/4 cup melted margarine, 3/4 cup brown sugar and egg yolks, beating until mixture is light and fluffy. Pour into buttered 12-inch porcelain quiche dish or shallow 2-quart casserole.

In small bowl, combine remaining melted margarine, remaining brown sugar, pecans and cinnamon. Spread evenly over yams. At this point, casserole may be refrigerated, covered, overnight.

When ready to bake, preheat the oven to 350 degrees. Bake 45 to 50 minutes or until golden brown and bubbly. Let stand 10 minutes before serving.
