Nutmeg Custard

3 eggs
2/3 cup condensed milk
2 cups hot water
1/2 teaspoon salt
1 teaspoon vanilla
2 teaspoons freshly grated nutmeg plus extra to top

Preheat the oven to 325.

In a medium sized bowl beat the eggs gently until smooth.

In a small bowl mix the condensed milk and water. Very slowly add the milk mixture to the eggs, stirring constantly. Add the salt, vanilla, and nutmeg to the egg mixture.

Pour the custard into well greased custard cups and sprinkle with the additional nutmeg. Place the custard cups in a roasting pan. Fill the pan with boiling water 1 inch up the outside of the custard cups.

Bake for one hour or until the custard is set.
