POOR MAN'S CAKE
(Eggless, Milkless and Butterless)

1 c. brown sugar
1 1/2 c. water
1 1/2 c. seedless raisins
1/3 c. shortening or margarine
1 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. nutmeg
2 c. sifted flour
4 tsp. baking powder
(Rumford's)
1/2 tsp. vanilla
1/2 tsp. salt

Boil together for 3 minutes sugar, water, shortening,
spices and salt; cool. Add flour and baking powder sifted
together. Add vanilla. Mix well and bake in loaf pan, well
greased, in a slow 325 degrees to 350 degrees oven for about 1 hour.

EGGLESS CHOCOLATE PIE FILLING

4 Tbsp. cocoa
1/4 c. flour
3/4 c. sugar
1/2 tsp. salt
2 c. top milk
3 Tbsp. butter
1 tsp. vanilla
2 Tbsp. cornstarch

Mix dry ingredients well and add liquid. Mix well and
cook until thick. Pour into baked pie shell and top with your
favorite topping. I use Cool Whip, since filling is eggless.

EGGLESS CAKE

2 c. sour milk
2 c. sugar
1 c. butter
4 c. flour
2 tsp. soda (full)
1 tsp. cinnamon
1 tsp. allspice
1 tsp. nutmeg
1 tsp. cloves
2 c. raisins
1 c. nuts

Cream butter and sugar; add milk, a little at a time,
between dry ingredients, which have been sifted together. Coat
raisins and nuts with some of the flour and add. Bake at 350 degrees
for 30 minutes. (I don't use full amounts of nutmeg and
cloves.)

Icing for Eggless Cake:
1/2 c. butter or oleo
1 c. cream
1 c. sugar
1 egg, beaten
1 Tbsp. flour
1 c. nuts
1 tsp. vanilla
Cook butter or oleo, cream, sugar, egg and flour until
thickened, then add nuts and vanilla. Cool and spread on cake.

EGGLESS MAYONNAISE

--------------------------------------------------------------------------------
1/2 tsp. salt
1/2 tsp. mustard
1/4 tsp. paprika
1/4 tsp. granulated sugar
3 Tbsp. evaporated milk
3/4 c. salad oil
2 Tbsp. vinegar or 1 Tbsp.
vinegar and 1 Tbsp. lemon
juice
few grains cayenne

Mix dry ingredients thoroughly. Add evaporated milk and
blend well. Beat in salad oil gradually. Add vinegar or
vinegar and lemon juice and beat until mixture is smooth.
Makes 1 cup.
