Here's my recipe - it's not too hard.
2 cups uncooked rice (Carolina is best)
4 eggs Separated
1 cup grated parmesan or romano
8 oz mozzarella - cut into cubes
1 cup Italian flavored bread crumbs

- cook rice following directions - but omit butter
Cool until easy to handle
- fold in slightly beaten egg yolks and grated cheese. Mix well.
- shape balls using about a little more than 1/4 cup for each, placing a cube of mozzarella in the center of each (moisten hands for easier shaping)
- beat egg whites in a pie plate, place bread crumbs in another. Gently roll rice balls in egg white and then in bread crumbs. Place in flat pan and chill for 1 hour.
- heat vegetable oil and fry balls, turning for even cooking - cook until golden.
This recipe makes about 24 balls.
