Well, I put half the meatloaf into the pan and stick in either frozen Brussels sprouts or steamed fresh ones. Then, I put a piece of sliced cheese (your choice) cut in half and folded over each sprout and top with the rest of the meatloaf. EVEN if you don't care much for the sprouts, it's just a delicious way to get them inside the body. My kids LOVE it. I heard of another recipe that the lady put whole boiled eggs inside!! In either one, you place them so that each slice gets a whole Brussels sprout or egg. I've also just put a layer of cheese and ketchup inside when I put cheese and Ketchup on top (last 15/20 mn. or so before it's done) - works in the microwave or oven - with either cooking method, I drain the fat off at intervals.....

Just incase you might be a lasagna fan, I put a layer of steamed and drained spinach between the center layer of cottage cheese/parmesan/basil/egg mixture....very complimentary to the lasagna - and, again, a good way to get spinach into the body....
