Pepper Garlic Jam

4 cups thawed strips sweet yellow peppers
4 cups sugar
4 cloves garlic, chopped or more
2/3 cup lemon juice

Put all ingredients together and cook over medium heat until sugar
is dissolved. Bring to a boil and cook until it tests as thick as
you want. Bottle and seal in BWB for 5 minutes.

HOT RELISH WITH ATTITUDE

4 lbs. tomatoes

2 green peppers, seeded

2-4 hot red peppers, seeded (to taste)

6 onions, peeled

4 c. celery

1 c. fresh chopped parsley

2 T. salt

½ c. sugar

4 c. vinegar, white or cider

Coarsely chop all vegetables (grinder, food processor, or by hand). In large glass bowl, mix in parsley, vinegar, sugar, and salt. Ladle into sterilized jars. Cover or seal. Refrigerate for several days before using. Yield: about 5-6 pints. Good on hamburgers or with beef roast or venison. Note: this is an uncooked product. Store in very cool place.
