Elegant Chicken Rolls

6 skinned chicken breats (halves-4ot 6 ounces each)
4 ounces cream cheese, roomtemp-softened
4 ounces crumbled feta cheese
2 tablespoons basil leaves, snipped
1/2 teap black pepper
6 tablespoon sweet roasted peppers, drained and chopped
1 1/4 cups seasoned courtons, smashed to make 1 cup
1 egg
1 tablespoon milk
12-18 spinach leaves
6 ounces thinley sliced deli ham


Preheat oven to 375.

Butterly cut the breast.
Spread chicken breast open flat. Place each
breast between two pieces of wax paper. Flatten
chicken to at least 1/4 inch thickness.
Combine cream cheese, feta, and snipped basil
and black pepper, blend well and set aside.
Chop red peppers, drain on paper towels.

Crush the croutons, place in shallow bowl.
Combine egg, milk, and blend well.
Cover chiciken breast with single layer of spinach leaves.

Top with a scoop of cream cheese. Spread to with in 1/4 of the edge. Sprinkle with 1 tablespoon red peppers. and cover with 2 slices of the ham.
Roll up like a jelly roll, tuck in the ends.
Dip each in egg mixture, coating with crumbs.
Place seam side down in square baker.
Bake 35 minutes or till chicken is no longer pink and juices run clear..
Yields: 6 servings
