Frozen Peanut Butter Pie

A real smoothie... for your squirrely friends.

Ingredients
Crust:
1/3 cup (75mL) butter
One 6-ounce (170g) package semi-sweet chocolate chips
2-1/2 cups (625mL) Kellogg's Rice Krispies cereal
Filling:
One 8-ounce (250g) package cream cheese, softened
One 10-ounce (284mL) can sweetened, condensed milk
3/4 cup (175mL) peanut butter
2 Tablespoons (30mL) lemon juice
1 teaspoon (5mL) vanilla
1 cup (250mL) whipping cream, whipped
Chocolate fudge sauce
Crust: In heavy saucepan, melt butter and chocolate chips over low heat. Remove from heat and gently stir in cereal until completely coated. Press into bottom and sides of a buttered 9-inch pie plate. Chill 30 minutes.

Filling: In a large bowl, beat cheese until fluffy. Gradually beat in condensed milk and peanut butter until smooth. Stir in lemon juice and vanilla. Fold in whipped cream. Pour into prepared crust. Drizzle chocolate topping over pie and freeze 4 hours or until firm. If you have any leftovers, wrap and return to freezer.
