Cod-Fish Cakes


Cod fish, commonly known in the Caribbean as "salt-fish" is salted, dried cod, imported from Canada. Salt-fish was imported historically as standard food for slaves, but is currently viewed as a valued element in many Caribbean dishes.

½ lb. salt fish
1 egg or milk to mix
1 onion minced
½ tsp. black pepper or hot pepper sauce
2 blades chive
marjoram, thyme
½ cup flour or more
1 tbsp. Chopped sweet pepper

METHOD
Scald fish twice or soak overnight. Remove skin and bones and mince or shred into very small pieces. Add chopped chive, marjoram, thyme, onion, sweet pepper, black pepper, flour and beaten egg or milk. Mix well to make soft dropping consistency. Drop by spoonfuls into hot shallow fat and brown on both sides. Drain. Serve hot.

N.B. A stiffer mixture can be rolled between floured hands into small balls and fried in deep fat. They can be skewered with toothpicks and served with a dip.
