: This is a recipe I had ages ago and lost. It came from an out of print
: cookbook called Princess Pamela's Soul Food Cookbook. The author had a restaurant in Harlem called the Little Kitchen (I think)
: The cake was not frosted, and was baked in a loaf pan.
: Essentially it was like the filling for sweet potato pie, but firmer and sliceable. The sweet potato cake recipes here are great,
: but not the one I seek. HELP!!! The cake is the best of both worlds - pie/cake. This is a fabulous site, but I can't stay long, I
: get too hungry!!!Hope someone knows what I'm talking about, please e-mail me if you do. Thanks!

Dear One -
Rest easy. I have 2 paperback copies of this book which took me years to find and replace. Both are mint but one can go. Here is your recipe:
Sweet Potato Cake (pg. 231)
1 1/2 cup sifted flour
2 teaspoons baking powder
1/4 tsp. salt
2 cups, hot, boiled, mashed sweet potatoes.
1/2 cup shortening
2 eggs, well beaten
3/4 cup brown sugar
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 cup milk
1 tablespoon lemon juice
Combine flour, baking powder, and salt and sift into mixing bowl. To the mashed potatoes, add shortening, eggs, brown sugar, cinnamon, and nutmeg. Beat well. Alternately add the flour mixture and milk, beating well after each addition. Add lemon juice and turn into greased loaf pan. Bake at 350 until done - aout one hour.
"There ain't a thing I do, a person I know, a dish I cook, couldn't be made a mite better. That's no reason not to love it for the best that it is right now"
Princess Pamela (Quote opposite recipe)
Good luck and good eating!
Mary Alice
