BAKED CHICKEN STRIPS

7 or 8 deboned chicken breasts
2 c. fine bread
1 c. Parmesan cheese
1 1/2 tsp. salt
1 Tbsp. thyme
1 Tbsp. basil
1 c. butter, melted

Cut chicken into 1 1/2-inch strips. Combine dry ingre-
dients. Dip chicken strips into butter and then coat in
crumbs. Place on lightly greased cookie sheet. Bake for 20
minutes at 400 degrees. Turn strips after 10 minutes. This is a
super recipe for appetizers or perfect for a Tailgate picnic.
The thyme and basil can be adjusted to your family's liking.
Can be reheated in the microwave.
For Some Creative Variations: Try other spices such as
lemon pepper or barbecue spice.

BARBECUED RIBS

3 lb. country-style (loin
back) ribs
1 tsp. salt
1/4 tsp. freshly ground pepper
2 tsp. pickling spices
1 large clove garlic, chopped

Place ribs in large pot; add salt, pepper, pickling
spices and garlic. Add water to cover; bring to boil. Reduce
heat; cover and simmer until ribs are tender, about 1 hour.
Remove from heat and allow to cool in liquid. Drain and
refrigerate until ready to grill. Set ribs on preheated
portable grill placed on car's tailgate or a table. Brush
occasionally with sauce, grilling about 20 minutes, until ribs
are richly glazed. Makes 6 servings.

QUICK BAR-B-Q

1 can corned beef
1/2 c. barbecue sauce

Break corned beef apart with a fork and place in pan.
Pour sauce over top and place in a 400 degrees oven for 10 minutes or
until completely heated.
Stir well to mix. Serve on sesame seed buns or plain
bread for sandwiches.
For tailgate parties, wrap buns individually in foil and
place in thermal container to keep warm. Serve with assorted
chips.

GOOF CAKE

1 box yellow cake mix
1 egg
1 stick butter or margarine

Topping:
1 box confectioners sugar
1 (8 oz.) cream cheese
2 eggs
1 tsp. vanilla

Combine cake mix, egg and margarine. Pat into 9 x
13-inch pan. (It is very stiff to work with.) Combine topping
ingredients and pour over cake mixture. Bake at 350 degrees for 40
minutes.
Note: This is good for picnics, tailgate parties, or
reunions of all kinds.

STROMBOLI

1 loaf Riches frozen bread
dough, thawed
1 egg, beaten
1/2 tsp. oregano
salt and pepper
1/2 lb. pepperoni, sliced thin
1/4 lb. Provolone cheese,
sliced thin
1/4 lb. Mozzarella cheese,
sliced thin
1/2 lb. ham, sliced thin

Mix oregano, salt and pepper with beaten egg. Roll
bread dough to 18 x 12-inch rectangle. Brush with 1/2 of the
egg mixture. Cover the dough with layers of pepperoni, cheeses
and ham, then roll up as a jelly roll. Seal all edges firmly
and brush with remaining egg mixture. Place on greased cookie
sheet and bake at 350 degrees for 30 to 35 minutes or until golden
brown. (It will bake to about 2 1/2 times its original size.)
While warm, wrap in foil and place in picnic cooler to maintain
warmth for picnic or tailgate party.
