Mongolian-style Grilled Short Ribs With Leeks Au Gratin

Ingredients:
1/4 cup canola oil
4 lbs. beef short ribs
1 onion, diced
1 carrot, diced
1 stalk celery, diced
1 tomato, diced
1 bay leaf
5 black peppercorns
1 cup red wine
2 quarts water

Marinade Ingredients
1 cup hoisin sauce
1 tsp. garlic, minced
1 tsp. ginger, minced
2 Tbsp. honey
2 Tbsp. chili paste with garlic (preferably Lan Chi brand or a sambal sekera


Instructions:
Heat 2 Tbsp. of canola oil in large saucepan and brown ribs on all sides over high heat. Remove ribs and reserve. Lower the heat to medium-high, add remaining canola oil to the pan and sauté onion, carrot, celery, tomato, bay leaf and peppercorns for about 5 minutes or until golden brown. Return ribs to pan and add wine and water. Simmer over low heat for 1-1/2 hours or until meat is tender. Strain through sieve and discard vegetables.

While ribs are simmering, combine marinade ingredients in a bowl and set aside. Prepare leeks au gratin (See Goes With recipe). Prepare the grill. Carefully remove meat from bones, brush well with marinade and finish on hot grill.
