This recipe is tried and true! I first learned it in high school, but have since seen it and it's numerous cousins many times.

This mix keeps well on the pantry shelf for 6-9 months in moderate weather. In hot weather it should be moved to a cool room or the fridge.

Family of 2-3 Family of 3-4 Family of 5+
5 C 10 C 20 C Flour
1/6 C 1/3 C 2/3 C Baking powder
1/2 Tbs 1 Tbs 2 Tbs Salt
1 C 2 C 4 C Shortening
Sift together the first three ingredients in a large bowl. For making large quantities you may have to get creative and use a roasting pan, wok, or other large container.
With clean hands, add the shortening bit by bit, rubbing it into the flour mixture until blended. The final product should clump when pressed together, but crumble easily.

Master Mix makes excellent pancakes:

Family of 2-3 Family of 3-5 Family of 5-8
2 C 4 C 8 C Master Mix
1 C 2 C 4 C Milk
2 4 8 Salt
Combine ingredients in a bowl or mixer. Beat until smooth.
Pour onto hot buttered griddle or large frying pan
Cook until edges appear dry, and flip them
When both sides are golden, serve hot with butter, brown sugar, syrup, whipped cream and/or fruit.
