Lin,

I think she is referring to the tampura fried veggies.
Here is the batter recipe..

You can do cucumbers, sliced thin, bell peppers, banana sweet peppers, sliced in strips, thinly, squash, thinly sliced, small whole corn on the cob.
Mr Food did a whole 30 minute show on deep frying veggies.
You have to make sure they are very dry before dipping in batter, so they will hold the batter, deep fring in HOT oil..


TAMPURA BATTER

6 c. flour
1 Tbsp. baking powder
1/4 c. salad oil
1 can beer, any kind
1 tsp. salt and pepper
halibut, sole, bass, cod or
shrimp, raw

Mix all ingredients thoroughly. Thin more with water if
needed. Batter drip off fish not run off. Butterfly fresh
shrimp or any raw fish above. Dip in batter, letting excess
drip off before putting in three inches of oil. Deep fryer is
best.
