Raspberry Salsa

1/2 cup fresh raspberries, washed
1/2 cup chopped red bell pepper
2 Serrano peppers, minced fine
1/4 cup chopped red onion
1/2 cup chopped tomato, seeded
2 teaspoons fresh chopped cilantro
1 pinch salt

Gently combine all the salsa ingredients, carefully leaving the raspberries whole.
Allow to set for at least 1 hour.

Raspberry Salsa

1 1/2 cups seedless raspberry preserves
2 tablespoons white vinegar
2 or 3 chipotle peppers in adobo sauce, drained
and chopped
3 cloves garlic, minced

Combine ingredients and bring to a boil Reduce heat and simmer uncovered for 5 minutes.

Strawberry-Raspberry Mint Salsa

1 cup raspberries
1/2 cup water
1 1/2 teaspoons fresh lemon juice
1 1/2 tablespoons sugar
1 cup sliced strawberries
1 teaspoon chopped fresh mint

In a blender, combine the raspberries, water, lemon juice and sugar. Puree until smooth. Strain through a fine-mesh sieve into a bowl. Add the strawberries and mint and toss to combine. Cover and chill before serving.

Raspberry Tomatillo Salsa

3 cups tomatoes, chopped
1 1/2 lbs. fresh red raspberries or 1 cup
individually quick frozen, thawed
1/4 cup red or Bermuda onion, chopped
1 tomatillo, sliced and chopped
1 teaspoon wine vinegar
1 tablespoon lemon juice
1 small jalapeno pepper, chopped
1/4 cup cilantro leaves, chopped

Mix all ingredients. Chill and serve.

Raspberry Salsa

2 cups fresh or unsweetened frozen
raspberries, thawed & drained
2 jalapenos, seeded and minced
2 tablespoons red onion, minced
2 tablespoons fresh cilantro, minced
2 tablespoons red wine vinegar (raspberry
vinegar would work also)
1/8 teaspoon salt

Combine all ingredients in a bowl and chill for 1 hour. Cover and refrigerate. Should keep about 7 days.

Golden Raspberry Salsa

1 pint golden raspberries
1/4 cup finely diced red onion
2 tablespoons orange juice
1/4 cup finely diced yellow bell pepper
2 tablespoons lime juice salt
2 tablespoons chopped cilantro
1 jalapeno, finely diced

Combine all ingredients until well mixed.
