PECAN PIE COOKIES

Cookie:

--------------------------------------------------------------------------------
1 c. butter
1/2 c. sugar
1/2 c. dark corn syrup
2 eggs, separated
2 1/2 c. all-purpose flour

Filling:
1/2 c. confectioners sugar
1/4 c. butter
1/2 c. chopped pecans
3 Tbsp. dark corn syrup

Stir butter and sugar on low speed in large bowl with
mixer. Add corn syrup and egg yolks; beat until blended. Stir
in flour gradually. Chill several hours. Beat egg whites
slightly. Using 1 tablespoon of dough for each cookie, roll in
balls and brush with egg white. Place on greased cookie sheet,
2-inches apart. Bake at 375 degrees for 5 minutes. Remove from oven.
Roll 1/2 teaspoon of chilled filling; press firmly into center
of each cookie. Return to oven and bake 5 minutes longer or
until lightly browned. Cool for 5 minutes before removing from
tray.

PECAN PIE COOKIES

1/4 lb. margarine
1 c. flour
3 oz. Philadelphia cream
cheese

Filling:
3/4 c. brown sugar
1 egg
1 Tbsp. margarine
1/2 tsp. vanilla
1 c. chopped walnuts or pecans

Mix together margarine, flour and cream cheese. Makes
24 little balls.
You need 1 1/2-inch or 2-inch cupcake pans. Put small
ball of mixture into cake pan and press to cover inside cup-
cake. Fill 1/2 full of filling. Bake at 375 degrees for 20 to 25
minutes.
