PERFECT PIE CRUST LIKE BAKER'S SQUARE

No rolling pin required. In deep narrow microwave mixing bowl melt 1/4 lb. butter without letting it change color. Soon as it bubbles have electric mixer ready to work quickly. Dump into hot butter all at once: 1 c. all-purpose flour, 1/2 t. salt, dash cinnamon. Beat half a minute just to combine & while it's still warm gather up into your hands & pat out evenly over bottom & up sides of a PAM-ed 9" pie pan. Bake partially 6 min. at 375°F before adding a filling to be baked like pumpkin or custard. Bake completely 375°F for 18 to 20 min. OR till golden when using a no-bake filling. Makes 1 single crust. FOR TOP CRUST: pat out over PAM-ed wax paper to 9" circle Invert over filling & bake per recipe for the filling. OR make streusel top crust crumbling a baked 9" shell & sprinkling over no-bake filling.
