POTATO AND VEGETABLE MEDLEY


5 lb. new potatoes, scrubbed, unpeeled and cut up1 lb. bag onion, diced2 sticks butter, slicedPaprikaSalt and pepperItalian seasoning
Combine all ingredients and place in roasting pan. Cover with foil. Bake at 400 degrees for approximately 30 minutes or until potatoes are tender. Remove tin foil. Broil for an additional 5 minutes or until potatoes are golden brown.

NOTE: Any fresh vegetable may be added or substituted.


POTATO BURGERS


2 lbs. hamburger2 med. potatoes, grated2 eggs1/2 onion, diced3/4 tbsp. salt2 to 3 dashes of pepper2 (15 oz.) cans tomato sauce
Combine all ingredients in large bowl, except tomato sauce. Mix as you would when preparing meatloaf. Add one cup of sauce to mix and continue to blend until all ingredients are combined well. Shape mixture into hamburger-sized patties and brown on both sides in a skillet. Pour remaining tomato sauce over patties and simmer on low temperature for approximately 20 minutes, covered with lid.

They are good served on hamburger buns, or with mashed potatoes using sauce as gravy.


POTATO CASSEROLE DELUXE


5 c. cooked, peeled & sliced potatoes1/2 c. butter corn flake crumbs8 oz. sour cream1 tbsp. minced onion1/2 c. milkSalt & pepper
Stir together sour cream, milk and onions. Spread half potatoes in buttered baking dish. Spoon half of sour cream mixture over potatoes. Sprinkle with salt and pepper. Repeat layers. Bake uncovered 20-25 minutes. Serves 6.

POTATO CASSEROLE


1 (2#) bag frozen hash brown potatoes, thawed1 onion, chopped fine1 stick butter, melted1 can cream of chicken soup(no water)1/2 pt. sour cream, Salt & pepper to taste
Pour melted butter on potatoes. Mix rest of ingredients together, pour over potatoes, mix. Put into 9 x 13 inch pan or casserole dish. Bake at 350 degrees for 1 1/2 hours, remove cover last 20 minutes. Makes large dish for 10 to 12.


POTATO BISCUITS


PotatoesSalt, pepper, onion or garlic and sage to taste
Prepare mashed potatoes, add spices and enough flour to make potatoes hold together. Brown in small amount of butter. Serve hot.
