Sugar-Free Frosting


Ingredients
1 (1.4 ounce) package sugar-free instant pudding mix
1 3/4 cups milk
1 (8 ounce) package cream cheese
1 (8 ounce) container lite frozen whipped topping, thawed

Directions
1 In a medium bowl, combine pudding mix and milk. Mix well and let stand until thickened.
2 In a large bowl, beat cream cheese until smooth. Add pudding and mix well. Finally, fold in whipped topping.


Makes 1 frosting for 1 cake

Sugarless Applesauce Cake


Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 1/2 cups unsweetened applesauce
3/4 cup brown sugar twin
2 eggs
1 teaspoon vanilla extract
1/2 cup raisins

Directions
1 Preheat oven to 350 degrees F (175 degrees C). Spray an 8x4 inch loaf pan with cooking spray.
2 Sift together flour, baking powder, baking soda, cinnamon, nutmeg and salt. Set aside.
3 Beat the eggs until light and add sugar twin. Add applesauce and vanilla.
4 Add flour mixture and beat until smooth. Fold in raisins.
5 Pour batter into loaf pan. Bake at 350 degrees F (175 degrees C) for about an hour, or until a toothpick inserted into cake comes out clean.


Makes 1 loaf pan


Sugarless Fruit Cake

Ingredients
1 cup chopped golden raisins
1/2 teaspoon salt
1 1/2 cups chopped walnuts
1 cup chopped cranberries
1 cup crushed pineapple
1/4 cup grated lemon peel
1 cup flaked coconut
1/3 cup orange juice
8 grams packets sugar substitute
1 teaspoon ground mace
1 teaspoon ground allspice
1 teaspoon baking soda
1 1/2 cups all-purpose flour

Directions
1 Mix sugar substitute with orange juice. Pour over chopped cranberries. Soak 1 hour, mixing often.
2 Mix raisins, nuts, coconut, lemon rind in flour until well coated. Add cranberries and orange juice mixture. Sprinkle baking soda over mixture, and mix. Mix in spices. Fold in crushed pineapple. Pour batter into a greased and floured 9 inch loaf pan.
3 Bake at 325 degress F (165 degrees C) for 40 minutes. Cool.


Makes 1 - 9 inch loaf
