Caraway, Potato and Cheese Casserole
1/4 cup (1/2 stick) butter
3 tablespoons flour
1 1/2 teaspoons caraway seeds
1 teaspoon salt
1/4 teaspoon pepper
3 cups milk
6 large red potatoes (about 3 pounds) peeled, sliced
2 medium onions, sliced
2 cups (8 ounces) shredded Cheddar cheese
Preheat oven to 350 degrees.
Heat butter in large saucepan over medium heat until melted.
Stir in flour, caraway seeds, salt and pepper until smooth.
Remove from heat. Gradually stir in milk.
Return to heat; bring to a boil, stirring constantly.
Boil and stir 1 minute.
Arrange potatoes and onions in buttered 3-quart baking dish.
Pour sauce over the top. Cover with aluminum foil. Bake 1 hour.
Remove foil. Bake 30 minutes longer or until potatoes are tender.
Sprinkle with cheese during last 10 minutes of baking.
