Cuzzin' Georgia's Pecan Nut Roll
This recipe came from my southern cuzzin',

Georgia. Now, she is a bit prissy and talks with

a real funny drawl, but no matter how delicate

that little "magnolia blossom" looks, she can

pack away a whole Pecan Nut Roll in nothin' flat.

Can't say as I blame her, though, they's good!


3 cups sugar 1/4 cup light corn syrup
1 cup cream just a dash of salt
2 c. chopped, salted pecans

Mix everythin' in a pan and stir good. Start it to cookin' on high heat, stirrin vigorously (like you is mad at yer man!) and keep the side of the pan washed down with a wet pastry brush. When it boils, stop stirrin, and turn the heat to medium. Cook to 228° (softball stage). Take it off the heat and pour it on a platter and let it cool. Stir and knead. Ya kin shape it in one big log and roll it in the pecans, or in a bunch of little logs and then roll 'em in the pecans.
