New York Sirloin w/ Jack Daniels Sauce and Tobacco Shaved Onions
No. of Portions: 1
Ingredients:
14 oz. New York Sirloin
3 oz. Barbecue Sauce
2 oz. Jack Daniels Whiskey
1 Small Shaved Onion
2 Chopped scallions
1 Clove chopped garlic
1 Small chopped shallot
1 cup virgin olive oil

Directions: Grill sirloin to desired temperature. While meat is cooking, heat oil in small saute pan . Add garlic and shallots and cook until golden brown.
Deglaze with Jack Daniels Whiskey. Reduce to ½ and add barbecue sauce. In seasoned flour dredge 4 oz of raw shaved onions. In deep saute pan heat ½ cup virgin olive oil. Cook Onions until golden brown.Top with scallions. Arrange onions in middle of plate. Place steak On top of onions (in center). Garnish with scallions.

Jack Daniels Grill Glaze

1 head of garlic
1 tablespoon olive oil
2/3 cup water
1 cup pineapple juice
1/4 cup teriyaki sauce
1 tablespoon soy sauce
1 1/3 cups dark brown sugar
3 tablespoons lemon juice
3 tablespoons minced white onion
1 tablespoon Jack Daniels Whiskey
1 tablespoon crushed pineapple
1/4 teaspoon cayenne pepper

1. Cut about 1/2-inch off of top of garlic. Cut the roots so that the garlic will sit flat. Remove the
papery skin from the garlic, but leave enough so that the cloves stay together. Put garlic into a small
casserole dish or baking pan, drizzle olive oil over it, and cover witha lid or foil. Bake in a preheated
325° oven for 1 hour. Remove garlic and let it cool until you can handle it.

2. Combine water, pineapple juice, teriyaki sauce, soy sauce, and brown sugar in a medium
saucepan over medium/high heat. Stir occasionally until mixture boils then reduce heat until mixture is
just simmering.

3. Squeeze the sides of the head of garlic until the pasty roasted garlic is squeezed out. Measure 2
teaspoons into the saucepan and whisk to combine. Add remaining ingredients to the pan and stir.

4. Let mixture simmer for 40-50 minutes or until sauce has reduced by about 1/2 and is thick and
syrupy. Make sure it doesn't boil over.

Ingredients:
1 cup pineapple juice
1/2 cup soy sauce
3 tsp. fresh ginger, grated
1/2 tsp. garlic powder
1/2 cup Jack Daniels (You may omit the alcohol and increase the soy sauce.)

Instructions:
Combine ingredients and mix well. Marinate for 2 to 3 hours. Grill to desired doneness (Depending on weight and thickness, 3/4- to 1-inch thick cook to medium, approximately 15 minutes on each side. Up to 1-1/2-inch thick, 18 minutes each side).

Blackened NY Strip Steak with Jack Daniels Gorgonzola Sauce, and Sour Cream Mashed Potatoes


Preparation of the Steak:
1) Heat a skillet to medium high heat.
2) Rub steak with olive oil and sprinkle
with 2 tbs. of Blackened Spice (available
in gourmet stores).
3) Sear steak for 2 minutes on each side.
4) Finish in oven to your degree of doneness.

Ingredients for the Jack Daniels
Gorgonzola Sauce:
1) 2 oz. Jack Daniels
2) 2 oz. Water
3) 1 qt. Heavy Cream
4) 2 tbs. Thyme
5) 9 oz. Gorgonzola Cheese
6) Salt and Pepper to taste.

Preparation of the Gorgonzola Sauce:
1) Reduce Jack Daniels and water by half.
2) Add cream and keep reducing it until it coats
the back of a spoon.
3) Next add the gorgonzola cheese and let it
melt into the sauce.
4) Season with salt, pepper, and thyme.

Ingredients for the Sour Cream
Mashed Potatoes:
1) 5 lbs. Yukon Gold Potatoes
2) 4 oz. Butter
3) 4 oz. Sour Cream
4) 8 oz. White Cheddar Cheese
5) 4 oz. Heavy Cream
6) Salt and Pepper to taste

Preparation for the Sour Cream
Mashed Potatoes:
1) Boil potatoes in water until fork tender.
2) Drain Well.
3) In a metal bowl hand mash the potatoes with
the sour cream, cold butter, cheese, and cream.
4) Season with salt and pepper.
