BLUEBERRY - LEMON CAKE


1 lemon cake mix1 lg. can blueberry filling1 lg. box Jello vanilla pudding1 lg. Cool Whip
Follow directions on both the cake mix box and on the pudding box. Refrigerate the pudding after making it. Bake the cake in a 13 x 9 x 2 inch cake pan. Cool. Spread vanilla pudding on top of the cake. Spread blueberry filling on top of pudding. Spread the Cool Whip over filling, then refrigerate for at least 30 minutes.

BLUEBERRY AND SOUR CREAM CAKE


1/2 c. butter, softened1/2 c. sugar1 egg1 1/2 c. all-purpose flour1 1/2 tsp. baking powder1 tsp. vanilla4 c. fresh blueberries2 (8 oz.) cartons sour cream2 egg yolks1/2 c. sugar1 tsp. vanilla1 1/2 c. whipping cream1/4 c. sifted powdered sugarGarnish: blueberries
Cream butter; gradually add 1/2 cup sugar, beating well at medium speed of an electric mixer. Add egg, beating well. Combine flour and baking powder; add to creamed mixture and mix just until blended. Stir in 1 teaspoon vanilla. Pour into a greased 9" spring form pan. Sprinkle with berries.

Combine sour cream and next 3 ingredients; pour over blueberries. Bake at 350 degrees for 1 hour or until edges are lightly browned. Cool on a wire rack; cover and cool.

To serve, remove cake from pan, and place on serving plate. Beat whipping cream until foamy; gradually add sugar, beating until soft peaks form. Spoon half of whipped cream over top of cake. Spoon remaining cream into a decorating bag with metal tip No. 2110. Pipe a border around top. Garnish, if desired. Serves 8.

BLUEBERRY BUCKLE COFFEE CAKE


2 c. blueberries2 c. flour3/4 c. sugar2 1/2 tsp. baking soda3/4 tsp. salt1/4 c. shortening3/4 c. milk1 egg
Heat oven to 375 degrees. Grease 9" round pan. Blend all ingredients except blueberries and beat vigorously 1/2 minute. Fold in the blueberries and spread in pan. Make topping and sprinkle over batter.

TOPPING:

1/2 c. brown sugar1/3 c. flour1/2 tsp. cinnamon1/4 c. soft butter
Crumb together. Bake for 45 to 50 minutes.

BLUEBERRY CAKE AND ICING


1 box yellow cake mix1 can blueberry pie filling12 oz. Cool Whip1/2 c. sugar1/2 c. confectioners' sugar8 oz. cream cheese, room temperature
Cook cake by direction. Mix sugar, cream cheese, and Cool Whip. Put cream mixture on layer, then put blueberry pie filling on top of it. Put this on all layers, ending with blueberry filling.
