Neiman Marcus Brownies


Notes:
This recipe was spotted in the Houston Chronicle.

Ingredients:
1 box chocolate cake mix
1 stick melted Butter
3 eggs, divided
1/2 C. chopped nuts, optional
1 - 1 lb box powdered sugar
8 oz. cream cheese


Preparation:
Preheat oven to 350 degrees. Butter and flour a 13 by 9 inch baking dish. Combine dry ingredients, butter and 1 egg. Add pecans if desired. Spread in greased pan. Beat powdered sugar, cream cheese and remaining 2 eggs together and spread on top of the cake. Bake for 50 minutes or until cake tests done.

NEIMAN MARCUS BARS

1 box yellow (butter recipe)
cake mix
1/2 c. melted butter
3 eggs
1 (8 oz.) cream cheese
1 box powdered sugar
1/2 c. flake coconut
1/2 c. pecans

Beat 1 egg with cake mix and add butter. Pat into 9 x
13-inch pan. Mix cream cheese, 2 eggs, powdered sugar, nuts,
coconut and pour over top. Bake 45 minutes at 325 degrees. Let cool
before cutting.

NEIMAN-MARCUS CAKE

1 pkg. German chocolate cake
mix
1 stick soft oleo
2 beaten eggs
8 oz. cream cheese
2 beaten eggs
16 oz. powdered sugar

Mix cake mix, oleo and 2 eggs; press in a well greased
9 x 13-inch pan. Mix cream cheese, 2 eggs and powdered sugar;
pour over batter. Bake at 350 degrees for 35 minutes only.

NEIMAN-MARCUS SQUARES

1 box yellow cake mix
1/4 c. oil
2 eggs
1 lb. confectioners sugar
8 oz. cream cheese
2 eggs

Mix cake mix, oil and eggs. Spread in a prepared 13 x
9-inch pan. Mix confectioners sugar, cream cheese and eggs.
Spread on top of first layer. Bake at 350 degrees for 50 to 60
minutes.

NEIMAN-MARCUS FUDGE

1 stick butter
1 lb. powdered sugar
2 eggs
1 (12 oz.) pkg. chocolate
chips
1 tsp. vanilla

Melt together in pan the butter and chocolate chips.
Mix powdered sugar, eggs and vanilla. Add to chips and butter
mixture. Beat well. Add nuts, if desired. Fold out in
greased pan.

NEIMAN MARCUS CHESS CAKE

1 pkg. yellow cake mix
2 eggs
1 stick butter, melted
2 eggs
1 (8 oz.) pkg. cream cheese,
softened
1 lb. pkg. powdered sugar
1 tsp. almond extract

Spray pan with Pam or Cooking Ease. Combine cake mix,
eggs and butter and pat down into an even layer in a 13 x 9 x
2-inch baking pan. Set aside. Beat cream cheese until fluffy.
Add the eggs and extract; mix well. Stir in the powdered sugar
until smooth. Spread cheese mixture over cake mixture in pan.
Bake in preheated 350 degrees oven for 50 minutes or until done. Cool
in pan on wire rack. Cut in squares to serve. (Cake will sink
in middle.) This cake freezes well.

NEIMAN-MARCUS LEMON BARS

Crust:

2 c. flour
1 c. butter
1/2 c. powdered sugar

Filling:
4 beaten eggs
1/2 c. lemon juice
1/2 tsp. baking powder
2 c. sugar
1/4 c. flour
grated lemon rind

Crust: Combine sugar, flour and butter for crust. Use
knife to cut in butter. Pat into 8 x 12 x 12-inch or 9 x
13-inch pan. Bake at 350 degrees for 20 minutes until lightly brown.
Filling: Combine eggs, sugar and lemon juice and beat.
Add baking powder and flour. Beat until smooth. Pour into
pan. Sprinkle lemon rind on top. Bake 25 minutes or until
cake pulls away from sides. Serves 15 to 20.

NEIMAN-MARCUS CHERRY NUT CAKE

2 c. butter
2 c. sugar
6 egg yolks, well beaten
3 c. cake flour
3/4 lb. candied cherries
1/4 lb. candied pineapple,
coarsely chopped
5 c. nuts, broken into pieces
2 Tbsp. lemon extract
6 egg whites

Cream butter and gradually work in sugar until mixture
is smooth and light. Beat in egg yolks. Sift cake flour; toss
with fruit and nuts, using hands until well coated with flour.
Stir flour mixture into creamed mixture; add lemon extract.
Beat egg whites until stiff, but not dry and fold into batter
thoroughly, but gently. Pour the batter into a well oiled and
floured 10-inch tube pan; bake at 350 degrees for 1 3/4 hours or until
done.
Cool on wire rack for 10 minutes. Remove from pan;
cool completely before slicing.

MILLION DOLLAR PIE

This recipe is one of Helen Corbett's of Neiman-Marcus
fame, original recipes.

3 egg whites
1/2 tsp. baking powder
1 c. sugar
1 tsp. vanilla
1 c. pecans
20 crushed Ritz crackers (do
not use Cheese Ritz)
1/2 pt. whipping cream
2 Tbsp. sugar
1/2 tsp. vanilla
Beat egg whites and add baking powder. Beat until
partially stiff; add a cup sugar and a teaspoon vanilla. Fold
in pecans and crushed crackers. Butter a 9 inch pie pan and
pour in batter. Bake at 325 degrees for 15 to 25 minutes. Cool
completely. Whip cream, adding sugar and vanilla. Spread on
baked crust and decorate with grated semi-sweet chocolate,
coconut and chopped pecans. Chill for 3 to 4 hours.
