Dolphin (“flipper”) is a mammal and it is illegal to fish, shoot, capture or harm Dolphin.
Therefore, there are no recipes available for Dolphin.
However, there is a Dolphin fish commonly known as Mahi Mahi or in Spanish as Dorodo.
Mahi Mahi is best served grilled or broiled. It is our recommendation to grill Mahi Mahi in a spicy or tropical marinade or spice. For a fast, easy & somewhat HOT recipe, simply marinade fish with Ass Kickin’ Teriyaki Sauce or Cajun Seasoning. For something with less HEAT, brush fish with oil or melted butter than sprinkle on Spice Hunters Seafood Grill & Broil. FreshFish4U.com sells all of these recommended marinades and spices and many more on our product page. Also, these marinades and spices should be available at your local specialty store.

How to Blacken Mahi Mahi

To blacken any fish you will need blackening seasoning. We offer two or three brands. The preferred cooking pan is a cast iron pan.

Brush fish with melted butter, then coat fish with the seasoning. Heat cooking pan into which you add unsalted butter or oil. When the cooking oil just starts to smoke, place the seasoned fish into pan. Cook the fish about two minutes on each side (depending on how thick your pieces of fish are). This cooking method will produce lots of smoke, so it is best done outside.
