Here's a few more Vidalia recipes. If anyone else has some, please post!! I need all I can get!!

Vidalia Onion Dip

Ingredients:

3 Cups finely chopped Vidalia onions
2 Cups mayonnaise
2 Cups grated Swiss cheese
1/4-1/2 tsp Tabasco sauce
1 Cup grated Parmesan cheese
paprika

Directions:

Preheat oven to 350 F. Mix onions, mayonnaise, Swiss cheese and Tabasco. Spread into 9 x 13 baking dish. Top with Parmesan cheese and sprinkle with paprika to taste. Bake in preheated oven at 350 for 30 minutes. Serve just warm with crackers.

Vidalia Onion Ring Loaf

Ingredients:

4 to 6 Vidalia onions
1 cup milk
3 eggs, beaten
1/2 tsp. salt
2 cups Aunt Jemima (or other commercial brand) pancake mix
Vegetable oil

Directions:

Slice onions crosswise and separate into rings. Combine milk, eggs and salt, and soak rings in the mixture for 30 minutes. Dip each onion ring in pancake mix and fry in hot oil until golden brown. Pack fried onions (don't press too hard) into 8x4 inch loaf pan. Bake at 400 F for 10-15 min. Turn onto serving plate.
