I thought I would share one of the yummiest (but weird) recipes I've come across. The first time I saw this recipe I thought "YUCK" but then I made it and ever since every time I make it I get rave reviews.
I guess there's sense to the saying "don't knock it till you try it!"
I gave this recipe to a friend and she had her brother calling long distance from clear across the country wanting this recipe !!! In western Canada we mostly use propane barbeques & I grill it on dead-low OR turn one burner on high and grill the chicken on indirect on the other burner..no flare ups that way. It takes a good hour or so that way but is well worth the wait. Hope you enjoy this as much as we do:


Three Citrus Grilled Chicken

1/3 c fresh orange juice
1/4 c fresh lemon juice
3 tblsp fresh lime juice
1 tblsp grated orange peel
2 tsp grated lemon peel
1 ¼ tsp grated lime peel
1/4 c olive oil
1/4 c honey
1/4 c frozen lemon juice concentrate, thawed
3 tblsp chopped fresh mint leaves
1/4 tsp cumin
1/4 tsp ground cinnamon
1/8 tsp salt
1/8 tsp ground pepper

4 chicken breast halves with ribs
1/4 red onion, thinly sliced

Mic first 14 ingredients together in large bowl until blended. Add chicken and onion & turn to coat. (or mix together in large plastic sealed bag).Refrigerate at least 2 hrs or overnight (better flavours if you marinate longer).
Prepare barbeque (medium low heat). Remove chicken from marinade. Pour marinade into small saucepan & bring to a boil. Grill chicken until cooked throughout basting frequently with marinade & turning occasionally.
